Starward Single Malt Whisky Finished in ex-Lagavulin Barrels is a distinctive Australian whisky that marries Starward's signature red wine barrel maturation with the rich, peaty character of Islay's Lagavulin Distillery.

This expression begins with Starward's new make spirit matured in Australian red wine barrels for approximately two and a half years. It is then finished for an additional 18 months in peated Scotch whisky barrels sourced from the renowned Lagavulin Distillery on Islay, Scotland. This finishing process imparts subtle peat and smoke characteristics to the whisky, creating a harmonious blend of Australian and Scottish whisky traditions.

Starward Two-Fold is crafted by blending single malt and wheat whiskies, each distilled and matured separately. The maturation process utilizes Australian red wine barrels, often filled fresh when still wet with wine, imparting unique fruity characteristics to the whisky.

Starward 100 Proof is fully matured in red wine barrels sourced predominantly from the Barossa Valley. These barrels, which previously held bold Australian reds like Cabernet and Shiraz, impart a richer mouthfeel to the whisky, making it a robust and full-bodied expression.

Tres Agaves Reposado is produced from organic blue agave grown in the Tequila Valley. The agaves are harvested and roasted to extract their natural sugars before fermentation and distillation. The tequila is then aged for about 9 months in repurposed Bourbon and Tennessee Whiskey barrels, imparting unique flavors and a light yellow hue.

This whiskey is a collaboration between Kings County Distillery and Parlor Coffee, both based in Brooklyn. It combines Kings County's house-made bourbon and corn whiskey with Parlor's cold brew coffee, resulting in a unique and balanced spirit.

Tasting Notes:

Aroma: Freshly brewed coffee intertwined with sweet grain notes, complemented by subtle hints of chocolate and vanilla.
Palate: Robust coffee flavors harmoniously blended with the smoothness of the grain spirit, enriched by notes of dark chocolate and a touch of caramel.
Finish: Long and satisfying, with lingering coffee boldness and grain sweetness, accompanied by a hint of cocoa.

Blend has a slight straw color and notes of ripe banana and tropical fruit on the palate leading to a clean smooth finish, the signature of Hamilton rums.

For nearly a decade, we have traded our freshly-emptied barrels with some of our brewing collaborators. They have in turn “seasoned” them with Stout before returning them. Stout Cask pushes the boundaries of flavor. It begins with Westward Whiskey Original and is then aged for one year in Stout casks.

Latin for ‘one hundred herbs’, this type of bitter alpine liqueur was traditionally made by monks and consumed in the alps of France and Italy. French Chartreuse is another example. Botanicals are individually infused for 20-50 days, rested, blended with alpine water and beet sugar, and rested again.

The only Demeter certified Biodynamic® brandy in the US, this offering is a truly agricultural spirit. Fermented, distilled in a German copper still and aged on the premises by Gena Nonini, whose family has farmed here for generations, the Marian Farms brandy is one of our all-time favorites. We are lucky to sell this blend of casks between 7 and 13 years old. Many of the great whiskey drinks were also brandy drinks. Try it in your Manhattan. Try it in your old fashioned.

This curaçao contains only three ingredients, all farmed in accordance with Biodynamic ® practices: California orange peel, sugar and grape spirit. Its bright elegance will remind you why this ingredient dominated the pages of bar books for more than a century. Thanks to our sister Gena of Marian Farms who developed it with us.

Solstice is our California take on the classic aperitivo - it’s fresh, bright, and unlike anything else. We create an infusion of whole strawberries (with their green tops), grapefruit, and orange peels in grape brandy, then “wash” the fruit with wine to pull out every last bit of flavor. That is all mixed together in tanks, where we then do a quick infusion of dried hibiscus flowers, which deepen the red color and provide a beautiful floral and tart note. The resulting aperitif is bright and lifted, with a subtle bitter backbone that balances the sweetness.

This vermouth is infused with a blend of botanicals, including Castelvetrano olives, dill seed, rosemary, thyme, oregano, lemon peel, orange peel, and wild foraged kombu. These ingredients contribute to its savory and herbaceous profile, making it particularly suitable for Dirty Martinis.

Flor de Azar Triple Sec is a beautifully balanced orange liqueur from Mexico, crafted with the finest orange peels and distilled to perfection. With vibrant citrus aromas, hints of orange blossom, and a smooth, slightly sweet finish, it’s the perfect ingredient for classic cocktails like Margaritas, Sidecars, and Cosmopolitans or enjoyed on its own over ice. At 40% ABV, it delivers an authentic citrus character that enhances any drink, making it a must-have for home bartenders and cocktail aficionados alike.
