Spirits

Navazos Palazzi is a collaboration between Equipo Navazos, a sherry négociant based in Jerez, and Nicolas Palazzi of PM Spirits. Built on a base of Oloroso sherry, this rojo vermouth is infused with dried botanicals—such as coriander, juniper, bitter orange peel, elderflower, and savory, to marry old-world sherry elegance with aromatic depth and cross-crossover appeal.

Tasting Note:
Deep and ruddy in color, it opens with dried cherry, warm spice, and gentle herbal tones. The mid-palate shows sweet orchard fruit, a touch of nutty richness, and savory herbaceous layers. The finish turns drier and more thoughtful, with lingering complexity, subtle bitterness, and a hint of sea air salinity.

The basis for Ocean's 12 Gin is a neutral grain spirit of exceptional gentleness. The distillate rests in American oak casks, which were previously used for the solera system of sherry production.

All botanicals are individually distilled to preserve the purest flavors and aromas. Cinnamon, rosemary, angelica are grown on their own property in Spain. 

Juniper, sweet orange, bitter orange, lemon, cardamom, angelica, cinnamon and rosemary intermingle on the nose and the palate.
