This American Single Malt is aged for several years in first-fill bourbon barrels from premium Kentucky distilleries before being finished in virgin toasted oak barrels from the Blue Ridge Mountains. Aromas of honeysuckle, while baked apple and
cinnamon brightly dance on the palate.

For nearly a decade, we have traded our freshly-emptied barrels with some of our brewing collaborators. They have in turn “seasoned” them with Stout before returning them. Stout Cask pushes the boundaries of flavor. It begins with Westward Whiskey Original and is then aged for one year in Stout casks.

Wolves 5-Year American Single Malt is a distinctive whiskey that embodies the spirit of the American West. Distilled in 2019 using a copper pot still, it was aged for five years in California French oak wine barrels under the Arizona sun. After this maturation, hand-selected barrels were blended and finished in aged Cognac casks, resulting in a complex and layered profile. On the nose, it presents aromas of honey, graham cracker, caramel, and red fruit. The palate offers flavors of vanilla custard, nutmeg, clove, sweet oats, and fig, leading to a medium to long sweet finish. Bottled at 48% ABV, this American Single Malt is both bold and inspired, celebrating the intrepid past of the American West.

NOSE: Butterscotch, maple and the rainbow of peppercorns
BODY: Full and robust
PALATE: Freshly polished leather, dried apricots, warm butter, dusty oak furniture in a fire, finishes with root beer and brown baking spice.
GENERAL: This forward and sexy rye will spice up your evening. Succulent and spicy on the entry yields to round, smooth, sweet bakery items and toasty oak. An experience akin to the pre-duel heightening of one’s senses followed by the euphoria of getting off the first shot.

Color: Tawny/Auburn
Nose: Brown sugar, toast, grain, dark fruits
Body: Full and chewy
Palate: Peanut brittle, vanilla, leatherbound books, finishes with almond and cola
General: Comes off nearly sweet, but beautifully balanced. Its powerful, but gracefully gentle, like Muhammed Ali petting a kitten. Pairs well with an elegant, yet sultry evening.

Distiller Notes: For years we’ve released a bold, heavily-smoked American Single Malt inspired by the super-smoky single malts of Islay (ai – luh). Formerly known as Winter Release, we’ve renamed this classic expression “Ode to Islay.” This expression is our way to raise a glass to tradition and pave our way with Southwestern ingredients – Ode to Islay is heavily mesquited. Not peated. It also joins the Global Cask Collection as a limited annual release like Frontera and Normandie.

This year’s Ode to Islay is our mesquited-not-peated American Single Malt finished in a mix of ex-rye, bourbon, and second-use Whiskey Del Bac Dorado casks.

The final result is a beautiful love letter to both inspirations. The last Ode to Islay expression earned a 9/10 from Malt Review Magazine and secured 91 points from Whisky Advocate.

On the Nose: 

You may find cocoa nibs, cinnamon, charred mesquite, and earth. On the palate, you may find soft vanilla up front, blossoming into plumes of mesquite smoke and white pepper, tapering off into soft cinnamon and candied toffee.

On the Rocks: 

You may find the mesquite moves to the forefront, contrasting against new notes of vanilla and dried stone fruit. The pepper spice recedes, replaced by notes of honey and butterscotch.

Our recommendation is to serve Ode To Islay with one large ice cube.

Home Base Single Malt is a unique Californian spirit capturing the terroir of the West Coast. It’s made from 100% estate malted barley and aged in ex-Home Base Bourbon barrels to let the grain flavor shine. In 2023, it received a Good Food Award in the Spirits category.

We recommended you enjoy it neat, over ice, or in a favorite Scotchy cocktail to experience the earthy, grassy nose with flavor notes of maple, cream soda, caramel, and honey nut.

Aged a minimum of three years, this 100% malted barley whisky is matured in former Bourbon casks sourced from Kentucky, adding depth and complexity. On the nose, aromas of vanilla, shortbread, give way to a touch of cedar. The silky body brings flavors of orange oil, toasted coconut, and graham cracker on the palate. The soft finish lingers with cinnamon and mild barrel spice.

This whisky showcases its light, natural color and is not chill filtered. Courage & Conviction Bourbon Cask is bottled in batches to highlight the nuance of each contributing barrel. The first batch, released in the Spring of 2021, is dedicated to one of Courage & Conviction's key mentors, Nancy Fraley. 46% ABV.

Whiskey Del Bac Classic kicked off our journey into American Single Malt. Classic is a riff on the Scottish model of whisky-making, but made in a desert climate and aged in American oak. It is handcrafted from 100% barley malt that is mashed, fermented, copper pot distilled, aged in the American Southwest, and bottled on-site. It's never chill-filtered.
