From the distillery: Made using mainland peat from St. Fergus, the sweet phenolic content of the whisky amounts to 35 PPM. A lengthy fermentation period of 160 hours results in a fruit-forward spirit that lends itself perfectly to ageing in the finest Sherry oak.

Nose: Cedarwood, cigar box, butterscotch and mocha, with orange peel, honey and plum jam.

Taste: Dark chocolate, smoked honey and mocha, with figs, treacle, burnt sugar and puffs of peat smoke.

NOSE: Baking spices, burnt honey and espresso, with hazelnuts, smoked almonds and butterscotch.

TASTE: Sweet peat, rich chocolate and heather honey, with cinnamon, ginger and oak-smoked sugar.

Every drop of this new dram is being distilled by local people to produce a special spirit which has been matured, married, and bottled here in this elemental place, and nowhere else. The Hearach is bottled at 46% abv, non-chill filtered, and free from artificial colouring."

This 'teaspooned' whisky is for all intents and purposes mostly the beloved 1989 Balvenie with that tiny amount of Glenlivet added in order to declassify the cask

From the bottler: 

Distillers can be very protective of their hard-won malts, especially those who carry the most prestigious of names. From time to time, they must relinquish the hold on their casks, when one is sold to an independent bottler, for instance. Before spirit changes hands, the distiller - green-eyed and flush with passion - will take a single teaspoon of another distillery’s single malt, and add it to the spirit in the cask. Just a dash it takes, but that whisky can no longer bear the name its distillery of birth.

The distillery of origin is a darling of Dufftown, where nine stout stills produce a spirit rich in fruit and notably honeyed. Her sister, nestled close by in the Moray countryside, is where the ‘teaspoon’ of malt originated. Though nameless, together they are a powerful and stunning pair.

Independent bottlings of spirit distilled at the Balvenie distillery are rarely found on the market, and though the distillery is notable for having experimented with different cask types, this ex-bourbon cask allows the distillery character to sing finely and clearly, while accentuating the sweet vanilla and stone fruit character.

From the bottler:

This venerable whiskey is reminiscent of the Springbank 25 year olds of the early 1990s, and so we believe the cask is one seasoned in the old style, a rare find in today’s market. Characteristic of Campbeltown whiskeys, salt dominates on the nose, followed closely by the rich fruitiness notable in Springbank whiskey, offering up dried apricots and spiced pear. Peaty notes creep up slowly, as the coastal style makes an impact with smoky, chocolate rich notes on the palate. A rich, oily middle and a long finish, the richness complemented by lighter lemon notes and barley sugar.

Produced in Northern Ireland, Bushmills carries a legacy dating back centuries and is distilled from 100% malted barley using traditional triple distillation. This 12-year-old expression is matured in a combination of ex-bourbon and Oloroso sherry casks and then finished in Marsala wine casks, resulting in a whiskey that blends heritage and innovation.

Tasting Note:
The nose opens with dried fruits, honeyed sweetness and toasted nuts. On the palate you’ll find butterscotch, milk chocolate, toasted almonds and subtle vanilla layered over fruit such as apricot and pear. The finish is smooth and satisfying with a touch of oak spice and lingering nutty warmth.

Tropical and mature, with the texture of melted chocolate and one of the finest finishes a single malt can bring, this stunning whisky calls for quiet admiration. Round and velvety, yet developed and fresh. Smoothed over by time, but with a beating heart.

Leatherwood honey and spicy gingerbread followed by juicy prunes and fresh lemon peel on the nose followed by a palate bursting with dark chocolate, tropical fruit and spices. Long and mellow on the finish with notes of creamy vanilla and citrus.

The exceptionally smooth, clean and fruity taste of Aultmore whisky can be traced to the Foggie Moss. The water source filters through bracken, gorse and heather purifying the water to the profit of Aultmore’s refined character. The Aultmore 21 Years Old is the pinnacle of the range with decades in refill hogsheads giving plenty of development without overpowering the classic Aultmore characters. This celebrates the herbal characters alongside stone fruit and gentle spice.

The Aultmore 21yr is like the ultimate fruit crumble, made of apples, pears and Cantaloupe melon, drenched in a creamy vanilla custard, and garnished with a sprig of Rosemary. It is a wonderfully complex dram, that you can slowly sip and savour as it evolves in the glass. ABV 46%.

Caol Ila 12 Year Old 2007 vintage Islay single malt Scotch whisky. Matured in hogsheads #300893 & #300986 bottled December 2019 by Signatory Vintage for the Cask Strength Collection. 593 numbered bottles. 58.6% ABV.

Our Winex exclusive cask was aged for 8 years, spending just over 7 years in ex-Buffalo Trace Bourbon barrels and then transferred into fresh Sandeman Ruby Port Casks for 6 months. At 55.9% ABV we recommend just a splash of water. The nose is complex and layered with cocoa powder, stewed cherries and biscuit peeking through the distinctive peat. The peat from Kilchoman has always stood out in my mind because it lacks any medicinal or burnt rubber qualities that turn many off to a peated scotch. On the palate it opens up with a hint of sweetness from the port cask. Flavors of baked cherry tart, citrus marmalade, toffee and dusty cocoa are wrapped cozily with the smokiness of the peat which warms the senses with pipe tobacco, smoldering earth and crushed seashell notes. The finish is long and cascading with a full and satisfyingly round mouthfeel.
