PALATE: Freshly polished leather, dried apricots, warm butter, dusty oak furniture in a fire, finishes with root beer and brown baking spice.
GENERAL: This forward and sexy rye will spice up your evening. Succulent and spicy on the entry yields to round, smooth, sweet bakery items and toasty oak. An experience akin to the pre-duel heightening of one’s senses followed by the euphoria of getting off the first shot.

Nose: Brown sugar, toast, grain, dark fruits
Body: Full and chewy
Palate: Peanut brittle, vanilla, leatherbound books, finishes with almond and cola
General: Comes off nearly sweet, but beautifully balanced. Its powerful, but gracefully gentle, like Muhammed Ali petting a kitten. Pairs well with an elegant, yet sultry evening.

Distiller Notes: For years we’ve released a bold, heavily-smoked American Single Malt inspired by the super-smoky single malts of Islay (ai – luh). Formerly known as Winter Release, we’ve renamed this classic expression “Ode to Islay.” This expression is our way to raise a glass to tradition and pave our way with Southwestern ingredients – Ode to Islay is heavily mesquited. Not peated. It also joins the Global Cask Collection as a limited annual release like Frontera and Normandie.

This year’s Ode to Islay is our mesquited-not-peated American Single Malt finished in a mix of ex-rye, bourbon, and second-use Whiskey Del Bac Dorado casks.

The final result is a beautiful love letter to both inspirations. The last Ode to Islay expression earned a 9/10 from Malt Review Magazine and secured 91 points from Whisky Advocate.

On the Nose: 

You may find cocoa nibs, cinnamon, charred mesquite, and earth. On the palate, you may find soft vanilla up front, blossoming into plumes of mesquite smoke and white pepper, tapering off into soft cinnamon and candied toffee.

On the Rocks: 

You may find the mesquite moves to the forefront, contrasting against new notes of vanilla and dried stone fruit. The pepper spice recedes, replaced by notes of honey and butterscotch.

Our recommendation is to serve Ode To Islay with one large ice cube.

The World’s Best Single Malt Whisky of 2023.

To create this whisky, we traveled to Spain and had Oloroso and Pedro Ximenez sherry made especially for us. The casks, once filled with quality sherry and seasoned for one year in Spain, were brought to the distillery to mature our New-Make spirit for a wonderful complex whisky. The M&H Elements Sherry is the first and only kosher single malt whisky in the world, aged in Sherry casks. This single malt reveals robust flavors of red fruit, dark chocolate, and oaky notes.

The seed for the nectar of the gods was sown in the barren desert. Many millennia have passed since barley has bloomed in the inhospitable climate of Rajasthan. For our uncompromising quest to create the finest spirits, we use the traditional Indian six row barley, which is cultivated using old indigenous practices that rely on organic and sustainable methods. The yield may be smaller but it lends a fruity and floral distinctive taste to the spirits.

Our cask-strength bourbon is a special blend of our unproofed flagship bourbon and a five-year wheated bourbon. made with organic grains in Sebastopol, CA. Like all our whiskies, it’s carefully blended and non-chill filtered.

Yellowstone Limited Edition represents an annual exploration in top-shelf blends and finishes. Making each year a unique and sought after release. For 2023, we created a delicately balanced blend of 7-year, 13-year and 16-year bourbons, that is then finished in Tokaji casks. Available in limited quantities for those who seek it.

A stunning 6 year old rye, finished in Cognac barrels which brings an undeniable complexity and beauty.

Distilled in Tennessee and aged at Savage & Cooke in Northern California.

BARRELS
Primary aging in new charred American oak barrels, finished in barrels that previously held Fine Champagne Cognac.

WATER
Proofed to 100 with pristine water from Dave’s high elevation property in Alexander Valley, 40 miles from the distillery.

Tasting Notes,
Brooding and intriguing on the nose with orange marmalade and spicy oak. Expansive palate with an array of baking spices, caramel and honey. Gorgeous from start to end.

The Meyer’s whisky is a mash of wheat and malted barley from the Champagne region and malted barley. The phase of malting the barley is entrusted to La Malterie du Château in Belgium, one of the oldest malteries in the world. Then the wheat and malted barley mash is brewed at an Alsatian brewer, Brasserie Saverne, who practices this technique for beer.

The distillation process is typical of the Highland scotch whiskeys: double distillation and made in distillery copper stills, at the Meyer’s Distillery. This blend superior is aged for a minimum of 7 years in former Sauternes cask from one of Bordeaux’s top estates, Château Doisy Daene.

Notes include apricot marmalade, orange blossom honey, kumquat, vanilla custard, white pepper, roasted almond and a thread of smoke. The palate is seamless and supple and just as inviting as the effusive aromas.

One of WhistlePig’s oldest whiskeys, Estate Oak Rye is for the true connoisseur of Rye. It takes its name from our Vermont Estate Oak, where it finishes its long, 15 year life. Sustainably harvested right off our 500-acre farm, the wood has more rings than the standard American oak used in whiskey barrels, imparting more flavor during maturation. Custom toast and char profiles takes the flavor even further, just like a perfectly toasted marshmallow. Hitting the bottle at 92-proof, the liquid is assertive and wise beyond its 15 year age statement, and boasts a score of 97 points from Wine Enthusiast. Red Spot is reborn! Mitchell & Son’s Spot Whiskey range dates back many moons, but over time a few expressions have disappeared from shelves, including Red Spot - but those days are over. The relaunched Red Spot is a 15 year old single pot still Irish whiskey, comprised of three different whiskeys aged separately then blended. One is matured in Oloroso sherry casks, one is aged in bourbon casks, and the final one is initially aged in bourbon casks before being finished in Marsala wine casks.

Nose: Stewed berries and booze red wine, with a touch of new leather giving it a savoury edge.

Taste: Apple turnover, black pepper spiciness, caraway, blackcurrant jam, soft vanilla.

Finish: Lasting oaky warmth and a final hint of damson.
