Aged a minimum of three years, this 100% malted barley whisky is matured in former Bourbon casks sourced from Kentucky, adding depth and complexity. On the nose, aromas of vanilla, shortbread, give way to a touch of cedar. The silky body brings flavors of orange oil, toasted coconut, and graham cracker on the palate. The soft finish lingers with cinnamon and mild barrel spice.

This whisky showcases its light, natural color and is not chill filtered. Courage & Conviction Bourbon Cask is bottled in batches to highlight the nuance of each contributing barrel. The first batch, released in the Spring of 2021, is dedicated to one of Courage & Conviction's key mentors, Nancy Fraley. 46% ABV.

With Sherry Influence, Dàlvve was enhanced with the rich flavours from Jerez. A deeper, darker whisky where the light smoky bourbon notes of Dàlvve join company with sherry matured casks. Dálvve Sherry Influence shows off a slightly darker side of High Coast Single Malt Whisky. It is an elegant all-round whisky where just over half of the barrels have previously matured oloroso sherry. Both the bourbon and sherry casks are of the highest quality which give clear flavours with classic sherry notes, fruitiness, cereal, vanilla and a light honey finish. In addition, there is a touch of Ådalen smoke because a smaller proportion of our peated spirit was used when filling some of the sherry matured whisky. Nestled into the north coast of the island, Port Askaig has been the gateway to Islay for hundreds of years. Port Askaig 45 Year is a rare example of the old Islay style. Distilled in 1968 and matured in five refill sherry butts, this unpeated single malt was distilled on Hogmanay in 1968 at Islay’s northernmost distillery. Bottled it at cask strength after the angels took their generous share. Fruit-driven, with almost no smoke and an abundance of tropical fruits such as mango and papaya, this is an exceptionally complex whisky that no Islay fan should miss. 40.8% ABV.

From the importer: Hombo Shuzo, the company behind Mars Shinshu distillery, opened a second distillery in Tsunuki, the birthplace of the Hombo family enterprise, in November of 2016. The climate at Tsunuki Distillery is drastically different from that of Mars Shinshu, as it sits at sea level and experiences higher humidity and large fluctuations in temperature. The goal of this new location was not necessarily to increase production, but to experiment with terroir. This bottling marks the very first single malt to be distilled at Tsunuki, produced between 2016 and 2017. Aged for just over three years in ex-bourbon barrels and sherry casks, this rich single malt exudes the enticing sweetness of vanilla and maple on the nose, leading to a fruity, pastry palate of banana crepes and apple pie and a finish of citrus, pine nut, and cinnamon. From the importer: This single malt whisky exemplifies the Mars approach to experimentation, taking full advantage of Japan’s vast and varying terrain by distilling in Nagano, 2,625 feet above sea level, then transporting the whisky south for aging in Yakushima, an island 60 km off the Kagoshima mainland. Distilled in 2015 and 2016, this non-chill filtered, lightly peated single malt has aged for just over 3–4 years in primarily ex-bourbon barrels and some sherry casks. Our Winex exclusive cask was aged for 8 years, spending just over 7 years in ex-Buffalo Trace Bourbon barrels and then transferred into fresh Sandeman Ruby Port Casks for 6 months. At 55.9% ABV we recommend just a splash of water. The nose is complex and layered with cocoa powder, stewed cherries and biscuit peeking through the distinctive peat. The peat from Kilchoman has always stood out in my mind because it lacks any medicinal or burnt rubber qualities that turn many off to a peated scotch. On the palate it opens up with a hint of sweetness from the port cask. Flavors of baked cherry tart, citrus marmalade, toffee and dusty cocoa are wrapped cozily with the smokiness of the peat which warms the senses with pipe tobacco, smoldering earth and crushed seashell notes. The finish is long and cascading with a full and satisfyingly round mouthfeel.

Full-flavoured, rich. Initially, concentrated iris notes hint at the extreme intensity of the nose. It then develops aromas of malted barley, exotic fruit (banana), liquorice and camphor. Notes of burnt wood and ash progressively settle over the aromatic palette. Long after, white flowers and beeswax make an appearance.Firm, lively. Malted barley is at the heart of the palate, coated in herbaceous, liquorice, spiced (ginger, cinnamon) and chocolate tones. Very elegant, the mid-palate also delivers plenty of energy and as it draws to a close, fresh tobacco leaves and coconut intertwine to create a natural symphony of aromas.Long, soft. It evokes the scent of wilted roses. Fine tannins balance its tangy character (lemon, grapefruit). It lingers on notes of tobacco, spices (cardamom, ginger), toasted nuts and stewed fruits (apple, damson). The final nose reveals exotic notes (lychee).

This no-age-statement version was released in 2016 as a permanent product that showcases the elegant style of Miyagikyo malts, when all age-statements were discontinued. This bottling has estery aromas generated by carefully selected yeast strains along with distinctive Sherry cask influence.
