Nose: Nougat, marzipan, aged oak, barrel char, rye spice, leather, sweet aromas interlaced with grounded notes

Palate: Rye grain, charred oak, leather, baking chocolate, Mexican chocolate, dried fig, light Bing cherries

Finish: Bold rye spice, lightly dried oak, Mexican chocolate, subtle leather, lingering heat

Palate: Bitter orange peel, black tea, cloves, toast, bread, honey sweetness

Solstice is our California take on the classic aperitivo - it’s fresh, bright, and unlike anything else. We create an infusion of whole strawberries (with their green tops), grapefruit, and orange peels in grape brandy, then “wash” the fruit with wine to pull out every last bit of flavor. That is all mixed together in tanks, where we then do a quick infusion of dried hibiscus flowers, which deepen the red color and provide a beautiful floral and tart note. The resulting aperitif is bright and lifted, with a subtle bitter backbone that balances the sweetness.

This vermouth is infused with a blend of botanicals, including Castelvetrano olives, dill seed, rosemary, thyme, oregano, lemon peel, orange peel, and wild foraged kombu. These ingredients contribute to its savory and herbaceous profile, making it particularly suitable for Dirty Martinis.

Samsara, meaning ‘rebirth’, is a full-bodied and fragrant blend of malts matured in ex Bourbon and ex Californian red wine casks.

Tasting: Vanilla, citrus, rich

Palate: Thick vanilla fudge, sweet floral grass

Finish: Rich, mouth coating, leading to refreshing citrus

Aged 2-3 months in American oak bourbon casks. Rich, baked agave and candied yams, hints of toffee and caramel, with a long, exceptionally smooth finish.
