Spirits

Produced in Northern Ireland, Bushmills carries a legacy dating back centuries and is distilled from 100% malted barley using traditional triple distillation. This 12-year-old expression is matured in a combination of ex-bourbon and Oloroso sherry casks and then finished in Marsala wine casks, resulting in a whiskey that blends heritage and innovation.

Tasting Note:
The nose opens with dried fruits, honeyed sweetness and toasted nuts. On the palate you’ll find butterscotch, milk chocolate, toasted almonds and subtle vanilla layered over fruit such as apricot and pear. The finish is smooth and satisfying with a touch of oak spice and lingering nutty warmth.

Aging mellows a spirit. It also brings out new flavors and aromas. Our Gran Reserva contains rums aged between 9 and 12 years, and Solera rums aged up to 50 years, creating a balance between sweet and dry that you won’t get in other spirits. Fernet-Vallet is a 70 Proof fernet liqueur made from a maceration of aromatic plants, roots and spices including cinnamon, clove, quassia wood, gentian root and cardamom. An intensely herbal, woodsy digestif, Fernet-Vallet enjoys popular usage throughout Mexico in the preparation of both classic and modern cocktails.

The most herbaceous expression of all, offering a sweet and spicy profile with hints of green chili, grapefruit and fresh agave.

In November 2012, this rum was distilled in the Diamond Distillery's historic, single-wooden pot still and put in used bourbon and whiskey barrels. This still was originally employed at the Versailles Distillery in the 17th century before being moved to the Diamond Distillery where it continues to produce iconic rums.
