It has a disarmingly gorgeous nose with brambly red fruit, a touch of peppermint and sage, all exquisitely defined and gaining cohesion with aeration. The palate is medium-bodied with a fine bead of acidity, glistening with vivacity and energy. Few 1990 Côte de Nuits have this sense of tension and the delineation on the finish is brilliant. The grapes come from several small organically farmed parcels near the top of the appellation close to Chambertin, blended with a bit of Mazoyères. They are vinified 75% as whole clusters, with a very gentle extraction before ageing in cask (one-third new). Very typical of Nuits-St-Georges, with a dark plummy fruit, notes of earth and mineral, and an almost savoury edge to it - slightly rustic, yet still very refined. The grapes from this 0.4ha parcel were fermented as 60% whole-cluster, which imparts a slight edge of herbs or menthol to the wine, but this amplifies in a good way the slightly sauvage character. You could sit with this for hours, just enjoying how finessed Cabernet Sauvignon can become with age - and how the clay that underpins the gravels on so much of Palmer's vineyard has helped keep freshness. It opens wonderfully in the glass with blackberry, forest floor, crushed iris petals and just a touch of dried blood. You would actually think that this comes from a cooler growing season. The palate is medium-bodied with fine-grain tannins. This has evolved since I last tasted it, mellowed and lost some of its plumpness, becoming more linear and almost reserved towards the finish. Still remarkably dark, intense and youthful in appearance, this Mouton shows more flamboyant characters on the nose than other vintages, with spices, cigar-box and blackcurrant leaf all to the fore. Rich, dense and fleshy palate with plenty of stuffing for further ageing. An impressive Mouton which lives up to the ‘star’ billing for the 1995 vintage with nearly all of the components in great balance. The only question mark regards the firm, slightly drying tannins, which still need to fully integrate. I suspect they will, but the 1995 may not quite reach the height of the 1996. Its gravelly soil also meant it fared far better than the more clay-led St-Estèphe terroirs. Great structure with a wonderful floral aroma and touches of cedar, with good persistency.
