    His Crémant du Jura Brut comes 15-year-old (2024) Chardonnay vines planted on a south face at 250 meters altitude on a gentle slopes of limestone bedrock with a calcareous silty topsoil. It is fermented in steel and enamelled concrete vats for 8-10 days followed by bottling in February.     Champ Divin’s cuvée of chardonnay is fresh and delicate; notes of pear, along with hints of yellow peaches and biscuit on a finely tuned finish. A delicious and very approachable example of Jurassien chardonnay.

    VINEYARDS / SOILS: Clay-limestone of shallow depth over limestone /silica bedrock
    FARMING: Biodynamic
    WINEMAKING: Light sulphuring after picking, followed by gentle pressing (3h1/2) of grapes.
    Fermentation with indigenous yeasts at temperatures maintained between 20 - 25 °C.
    Malolactic fermentation followed by a light kieselguhr filtration.
    AGING: Short period of barrel aging in neutral vessel with malolactic fermentation completed; low sulfur

    70% Chardonnay (5% sous voile), 30% Savagnin from multiple vineyards, totaling 4.0 ha in all, planted between 1980 and 1989.

    En Lya: west-facing, shallow clay-silt soil with limestone scree over a deeper layer of Liassic gray marl. Au Calvaire: southeast-facing on a gentle slope, tucked away in a valley, fine limestone scree and clay soil over gray marl. Trémoulette: at the bottom of a west-facing slope, fine limestone scree and clay soil over gray marl.

    Varieties are vinified and aged separately, 5% of the chardonnay is further separated and aged sous voile. Pressed with whole clusters with a pneumatic press. Ambient yeast fermentation, malolactic conversion and aging for 18 months in used barrels. Blended and aged for an additional 18 months in tank.

    40% Chardonnay, 40% Poulsard and 20% Savagnin co-planted in the Val de Vallière gorge, on a slope facing the village of Montaigu. Vineyard tended biodynamically, Demeter inspection and certification since 2003: applications of horn manure, silica and herbal teas. Hand-harvested with sorting in the vineyard. The three varieties are slowly pressed together. Fermentation and ageing in oak barrels without any added SO2, with regular topping-up. No addition of yeast, sugar, or any other additives. Aged 7 months in barrel over winter, bottling takes according to the the lunar calendar, still without the addition of any SO2.
