The fundamentals remain unchanged: settling and fermentation at low temperatures, a small proportion vinified in oak barrels and partial malolactic fermentation (20% was blocked in 2012). This vintage was characterized by a prolonged flowering period, significant rainfall and mildew pressure, resulting in a small crop. The harvest of fruit, which contributed to this cuvée, took place between September 17 and 22. "It was crucial to select only the ripest fruit, as maturation varied significantly between plots," explains Billecart’s head winemaker, Florent Nys. But what of the wine itself? Disgorged in May 2023 with a dosage of 3.8 grams per liter, it exudes aromas of candied lemon, honeysuckle and ripe peach, mingling with nuances of beeswax and orange zest. On the palate, it is full-bodied, ample and enveloping, boasting a layered, concentrated core, a chalky structure and mouthwatering acidity, despite the warm vintage. It concludes with a persistent, saline finish, hinting at the savory complexity that has emerged with such notable bottle age. The 2012 Viña Tondonia Reserva comes from a very dry year, with 25% less rain than the average (at the time), resulting in lower yields of very healthy grapes that delivered wines with nice balance between alcohol and polyphenols, making it very apt for the aging in barrel. It had a slightly longer élevage in barrel, six years. The wine is aromatic with a developed profile, spicy and tertiary (forest floor, a touch of brick dust and iodine), complex and nuanced. Picked earlier to assuage the effect of a warmer site, this blend of Tempranillo, 20% Garnacha and 5% each of Graciano and Mazuelo is structured and focused, with redcurrant, forest floor and green herb notes. This garnet wine reveals aromas of ash and plum marmalade, with a faintly herbal core and hints of oaky cedar. Its gravelly soil also meant it fared far better than the more clay-led St-Estèphe terroirs. Great structure with a wonderful floral aroma and touches of cedar, with good persistency. 95 Points! The 2012 Pavie celebrates its reclassification and upgrade to Class A St.-Emilion by sporting a new black label with gold print. Fortunately, every Pavie has benefitted since Perse began a complete makeover of this estate in 1998. From 47-year-old vines, the 2012 has an inky purple color, judicious toasty oak in the nose interwoven with copious blackberry and blackcurrant fruit, Christmas spices, as well as licorice and graphite. Full-bodied, rich and moderately tannic, it will require 5-7 years of bottle age but should drink well for 20-30 years. Kudos to Chantal and Gerard Perse for their extraordinary commitment to quality, which is so evident in this more challenging vintage than some of the great years like 2009 and 2010.
