Hand-harvested grapes were immediately pressed whole cluster, and tank settled overnight. Fermented with native yeast and native malolactic fermentation in barrels, aged nine months in 40% new French oak and 60% neutral.

This medium to full-bodied, round, balanced, mouth-filling beauty has lots of ripe black and blue fruits, some background spicy oak, velvety tannins, and a great finish. Coming just about all from the Ecotone Vineyard (there's a splash of Georges III in here), the 100% Cabernet Sauvignon 2021 Cabernet Sauvignon Mysterons is deep purple-hued, with an insanely good bouquet of red and black fruits, iron, bloody meat, and graphite, and it turns slightly more floral and violet-tinged with air. Classic, quintessential 2021 Napa Valley magic, it's full-bodied and has tons of obvious minerality, a stacked mid-palate, and enough tannins to warrant 5-7 years of bottle age. Released as the classic Cabernet Sauvignon Napa Valley in the past, the 2021 Cabernet Sauvignon Spinning Plates has a vivid purple hue to go with a rocking bouquet of pure blue fruits, spring flowers, graphite, and subtle background oak. It's medium to full-bodied and round, with a beautiful core of sweet fruit and ripe tannins. 97 Points! Fruit for this wine comes from a three-hectare parcel in Serralunga d'Alba near the village, with south and southwestern exposures in a small amphitheater. The soils in this area are older and thus more evolved, but they always create wines of strong character. The Vietti 2021 Barolo Lazzarito is easy to identify thanks to its salty mineral finish, which is almost metallic in taste, and its bright hints of sweet rosemary and wild herb. These delicate high notes form pretty framing to a dark core of elegant fruit. It has a darker red and blue-slanted fruit profile as well as some classic tobacco, scorched earth, and graphite aromatics. These all carry to a medium to full-bodied Cabernet Sauvignon with a seamless, layered, elegant mouthfeel, ripe, building tannins, and a pure, focused style that will benefit from 3-4 years of bottle age. 96+ Points! The 2021 Cabernet Sauvignon Aida Estate is very close in quality to the 29 Estate bottling, with perhaps a touch more concentration and tannin. There's less herbal nuance to the fruit, leaving black cherries to take the lead, backed by cedary oak and hints of dusty earth, while the palate is full-bodied and structured, leaving little doubt regarding this wine's potential longevity. It has deep aromas of pomegranate, red cherries and blueberries with nuances of garrigue, Angostura bitters and orange peel.
