Located between Millau and Montpellier in the Hérault region, the Pas de l'Escalette is the highest elevation vineytard in the zone of Larzac. Vines planted on limestone scree, surrounded by low dry-stone walls and clapas (piles of stones). The altitude, the deep and draining clay-limestone soils, the cool climate of these valleys; all meet up to produce wines with arichness, freshness and verticality very specific to this terroir. Grenache and carignan for the majority of the blends, syrah and cinsault, mostly matured in larger oak vats.

From the Sierra Madre Vineyard in Santa Maria and aged 16 months in 65% new French oak, the 2023 Chardonnay Le Souvenir Sierra Madre Vineyard delivers Chassagne-Montrachet minerality and white flowers, with beautiful stone and citrus fruits. Medium-bodied, it has a vibrant, pure, focused mouthfeel and salty minerality on the finish. It's another incredibly classy, pure, seamless Chardonnay from Lato that does everything right. - Jeb Dunnuck

From the Solomon Hills Vineyard, not far from Bien Nacido, and brought up 17 months in 65% new French oak, the 2023 Pinot Noir Suerte is slightly deep ruby/plum-hued and shows spicy black cherries, black tea, orange blossom, and forest floor notes. It's incredibly complex and layered, medium-bodied on the palate, with a pure, seamless mouthfeel, ripe tannins, and some classic Santa Maria salinity on the finish. 96 Points! The aromas of dried flowers and peaches are very cool and delicate. In fact they are only just beginning to unfurl. Super-focused and salty on the very concentrated, medium-bodied palate. 95 Points! French for “The Quarry,” the 2023 Chardonnay La Carriere comes from a steep site with a 45-degree slope and rocky, poor soils. It boasts a bright yellow color with a light haze (they don’t fine or filter), and the nose lifts with flinty wet stones, fresh pineapple, lemon curd, citrus blossoms, and an elegant, rounded vanilla perfume. The palate is medium to full-bodied and offers a silky texture, with an elegant, floating feel and delicate savory notes of Marcona almond on the finish. 94 Points! The 2023 PharoahMoans Red Wine is a 50-50 blend of Carneros Grenache and Pope Valley Syrah, but despite omitting Mouvèdre, it is the best vintage of this wine this taster has sampled. Pretty florals—violets and roses—join tea-like, potpourri-ish nuances and berry fruit in this medium- to full-bodied wine. Lively, fresh and complex, the palate is framed by silky tannins and displays ample length on the finish. 95 Points! The 2023 Riesling Pfaffenberg has subtle citrus and a darker aspect that disappears on the palate. The body is zesty, driven and energetic, with stony determination and citrus wings, grapefruit, tangerine and all the tangy stuff. Despite this soaring nature, this is anchored in stone.
