    The vines were planted on high elevation plots in Saint-Aubin in the 1980s. There are two soils types: One on white clay-limestone soil, and the other on a thin layer of red soil on lava, which gives all the complexity to this wine according to Fornerot.

    After being handpicked, the harvest is lightly crushed then pressed in a pneumatic press. The juice is then allowed to settle and placed by gravity in French oak barrels to ferment with indigenous yeasts. After aging in barrels for 10 months, the wine is placed in vat for a month and is bottled at the estate.

    From vines planted in 1988 totaling .75 hectare, the parcel is situated at the one of the highest points and at the limit of the Saint-Aubin appellation on border of the Grand Cru of Chevalier-Montrachet. The soil is very calcareous, the distorted and deformed stones create an outcropping in the shape of dog teeth (hence, the name). After aging in barrels for 12 months (20% of new oak barrels), the wine is placed in vats for 3 months and is bottled at the estate.

    The 2023 Jérome Fornerot Saint-Aubin 1er Cru "Murgers des Dents de Chien" is a white Burgundy wine with tasting notes that include Asian pears, apple blossoms, and toasted macadamias on the nose, followed by a full-bodied palate with notes of Jonagold apples, salted lemon, and a refreshing acidity, balanced by limestone minerality and a persistent finish. It's known for its precision, minerality, and rich, yet refreshing character.

    92 Points! The 2024 Village Chardonnay had just been freshly bottled when I tasted it at the estate in Kumeu in March 2025. The other 2024 Chardonnays were tasted as tank samples prior to filtration and bottling soon. The wine leads with yellow citrus and crushed shells. It is texturally fine, sleek and tightly coiled around a core of salty acidity. It is complex but composed and very good. "2024 was a fantastic year, just very small," says Paul Brajkovich. "Weather during flowering wasn't good in spring in 2023," says Michael Brajkovich. "Ripening in 2024 was excellent, so we have a 40% down in yield but very high quality. This new multi-vintage cuvée feels very at home in Laurent-Perrier's lineup, displaying some density and concentration evident in the choice of the reserve wines from all around Champagne which constitute the blend from 2019, 2018, 2016 and 2014. Led by 55% Chardonnay, with the balance Pinot Noir, there's a super-ripe, juicy orange fruit and tropical lilt to the profile here, with succulent apricot, pear and lemon peel pulled into quite a firm, tightly bound coil of structure. It's detailed with an energising, super subtle twist of quinine-like bitterness and some richer roasted almond notes hinting at maturity. For now it feels complete, yet not fully unwound. There's fine, compressed intensity here that will emerge beautifully with a little time on cork or, failing that, enough time to warm up in the glass. - Decanter Magazine

    92 Points! The NV Brut Héritage, blended exclusively from reserve wines with half from Grand Crus, consists of 55% Chardonnay and 45% Pinot Noir and spent at least four years on lees. Lemon oil suffused with smoke and rye bread rind creates a subtle but enticing scent on the nose. Frothy, lively bubbles on the palate somewhat detract from the wine's underlying smoky nuance, which shimmers between smoky plum, sponge cake and lemon.     98 Points! 2021 was marginally cooler for whites, and while this is young, its power is irrepressible yet it also shows restraint and harmony. A fine gauze of delicate florals and spice tucked behind structure, power and tension. Tuberose, green peppercorn, pear skin, preserved lemon, green cardamon and peach blossom. The palate offers jewelled hues of peach pit; a little flint, lots of wet stone minerality and crushed white sage dance with a very fine thread of salinity and lacy acidity. This takes time to unravel and unfurl, but once it does, it's got everything. The structure is superb and the 100% new oak meticulosity managed.
